The coffee is tropical, super sweet, but very delicate and balanced. It’s a full red honey process.The honey process describes a certain percentage of fruit pulp or "mucilage" allowed to remain in contact with the seed or "bean" during the drying stage. This fruit pulp contact enhances body and sweetness in the coffee. It was picked super ripe, de-pulped with all of its mucilage left on and dried on raised African beds for 25 days.This slow drying process allows sugars to migrate and concentrate, resulting in a very rich and round cup.
