The coffee cherries are hand-picked and floated to ensure only those of the best quality are processed. Those cherries are placed into a deep-cleaned fermentation tank, and covered with a sheet to create a seal. The seal creates a vacuum effect on the coffee, creating an anoxic environment for fermentation to begin. The temperature is regularly monitored to prevent over-fermentation.
