New decaf from Quietly. This time, it's from Ethiopia and Swiss Water Processed! Headquartered in Burnaby, BC, the Swiss Water Company is the only decaffeination facility that is certified organic and Kosher. The process relies on caffeine solubility and osmosis to remove caffeine. Green coffee beans are soaked in hot water that dissolves caffeine, as well as other chemical components and sugars from the coffee. The beans are then removed from this first soak water and passed through a charcoal filter that allows larger caffeine molecules to pass through while retaining the sugars, oils, and other chemical components that contribute to flavour. This green coffee extract-infused water is then used to soak the next batch of beans. Since the green coffee extract already contains he other elements of flavour, those substances won't dissolve from the beans and just the caffeine is removed. Sounds complicated, but the result is decaffeinated coffee that is high on flavour and free from additional chemicals solvents.
