Tastes Like: Pomegranate, Blood Orange, Passion Fruit
So, the first thing to note about this coffee is that in and of itself, its not very special. Castillo is a cultivar that has been championed for its resistance to pests and leaf rust but not massively interesting in terms of its flavour. In fact, it tends towards a signature 'planty' flavour.
However, this particular coffee has undergone a lot of rigorous processing - macerated and then sealed in airtight bags to ferment, temperature controlled, and then sealed and processed again, the result is a coffee that is magical. The juiciest, most lively and articulate acidity - it really does taste like pomegranate juice! One of the most unique shots of coffee I've had ever in the shop. Insane.
