I love cascara. Cascara is the dried and processed skin and fruit pulp of the coffee cherry. Typically, this fruit pulp is discarded or reused for compost once the coffee fruit seed or 'bean' has been removed. In the right hands, it is a wonderfully delicious waste product. Steep it hot for a super sweet, tart fruit tea or my favourite, cold infuse it overnight in the fridge for the best iced tea you've ever had. Magical.
